Rock samphire

Commonly found on Irish coastlines rock samphire unlike its cousin sea or marsh samphire has a more aromatic flavour to it.

I usually pair it with sea spinach & sea samphire, lightly blanching it then finishing it in the pan with some basil dressing & a touch of lemon juice.

Alternatively, as an attractive garnish, I would put it in a deep fat fryer at 180c until it crisps. Be careful it spits as its water content is high.
